5 Ingredient Avocado Mousse with Freshly Whipped Cream, Pistachios & Pomegranate

For the Avocado Mousse:

  • 1 ripe avocado, chilled then skin and pit removed
  • ¼ cup premade chocolate milk (whole milk)
  • 2 tablespoons maple syrup
  • 2 tablespoons dark cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Whipped Cream & Toppings:

  • 1 pint heavy whipping cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar (confectioner’s sugar)
  • Shelled pistachios, roughly chopped for garnish
  • Pomegranate seeds, for garnish
  1. In a food processor combine all mousse ingredients for 2-3 minutes, scraping down the sides as needed. Keep in mind that the longer you whip, the lighter the consistency. Place in the refrigerator while you prepare the whipped cream.
  2. In a large glass liquid measuring bowl, mix heavy whipping cream on a high speed for about 5 minutes until it begins to thicken.
  3. Add vanilla and powdered sugar to whipped cream and continue to mix for another minute or so until it firms up and forms peaks.
  4. Layer avocado mousse and whipped cream in two small glasses and top with chopped pistachios and pomegranate seeds. Enjoy!
