Multicooker Chipotle Honey Carnitas Recipe

INGREDIENTS
  • 4 lb pork shoulder
  • 11 oz chipotle peppers in adobo sauce
  • ¾ cup honey
  • Juice and zest of 1 lime
  • 1 tsp salt
  • 1 bunch green onions, thinly sliced
  • 1 bunch cilantro, very finely chopped
DIRECTIONS
  1. Place pork shoulder into your multicooker.
  2. In a blender or mini food processor, puree peppers, honey, juice and zest of lime and salt.
  3. Pour over pork.
  4. Cover multicooker, close venting lid, set on high pressure for 80 minutes. Allow multicooker to naturally depressurize.
  5. Shred with a fork, transfer to a serving dish. Garnish with green onions and cilantro. Serve with desired toppings and enjoy!
