Compound butter, or beurre composé in French, is any combination of butter and supplementary ingredients such as aromatics, herbs, spices, or sweeteners.

INGREDIENTS

  • 4 oz butter, softened
  • 2 tbsp fresh strawberries, finely diced
  • 1 tsp fresh thyme, minced

DIRECTIONS

  1. Combine the butter, strawberries, and thyme in the bowl of a stand mixer, and mix on medium speed for several minutes until thoroughly combined.
  2. Transfer mixture to a sheet of wax paper and shape into a log. Wrap tightly in plastic wrap and refrigerate or freeze until ready to use.

INGREDIENTS

  • 4 oz cultured butter, room temperature
  • ½ lemon, juiced
  • 2 tbsp capers
  • ¼ tsp flaked sea salt

DIRECTIONS

  1. In a small bowl, mix butter, lemon juice, capers, and flaked salt. Using a clean hand or spoon mix until well incorporated. Let sit for about 5 minutes in the extra lemon juice. Give it another mix, and drain any remaining juice.
  2. Place butter mixture on a piece of parchment paper and roll into a log shape. Place it in the freezer until ready to use. To make ahead, chill in the refrigerator overnight or until ready to use.

INGREDIENTS

  • 4 sticks butter, room temperature
  • 1 head garlic, roasted with cloves removed
  • ¼ cup minced fresh sage

DIRECTIONS

  1. Preheat your oven to 400 degrees Fahrenheit. Cut the tops off your garlic and drizzle with olive oil and salt and pepper. Wrap in tinfoil and roast for 45-60 minutes until soft and tender.
  2. Combine butter, roasted garlic, and sage in the stand mixer.
  3. If you are giving as a gift, pack into glass jars and store in the fridge. Remove 1-2 hours before use to allow to warm to room temperature.
