Homemade Cup O Noodles Recipes

Making these Homemade Cup O Noodles Recipes brought back fond memories of my college days. My roommate coined the term “The Poor Man” when referencing the cup o noodles and peanut butter and jelly sandwich I would scarf down when funds were tight. Let me be clear here though because these Homemade Cup O Noodles Recipes are far superior and fresher than what’s in that styrofoam cup from the grocery store.

I made 3 different kinds of noodle cups so you can get an idea of just how versatile these are. You can make a spicy, or a sweet or just a simply savory one, it’s totally up to you. You’ll also notice in the video, and recipe below, that I didn’t give ingredient amounts other than for the liquid. Don’t get mad at me! I created it like this so you can mix and match and put however many, or little, of that specific ingredient you’d like. For instance, if you don’t like mushrooms then simply don’t put mushrooms in. Try adding more spinach, or less, literally the possibilities are endless! Regardless, these are fun, quick and easy recipes that you and your family will love.

INGREDIENTS

  • 1 tbsp White miso paste
  • 3 tbsp Teriyaki sauce
  • 1 Bag of frozen or canned corn and edamame
  • Cooked udon noodles
  • 1 Bag of baby spinach
  • Cooked chopped chicken
  • 1 Julienne red bell pepper
  • Sliced shiitake mushrooms
  • Fresh cilantro leaves

DIRECTIONS

  1. Place all ingredients into a 1-quart mason jar and pour boiling hot water over top.
  2. Add the lid and let sit for 5 to 7 minutes or until vegetables are al dente.
