Festive St. Patrick's Day Cupcakes

If you’re looking for a sweet treat for the kids (and grown-ups) for St. Patricks Day then you are going to love these festive St. Patrick’s Day cupcakes. With some yummy candy, and fluffy frosting you can transform ordinary cupcakes into big bites of fun like these Rainbow Sprinkle and Pot of Gold Cupcakes.

You can use your favorite cake recipe or cake box mix for the cupcakes. I used a white cake mix, but I'm going to walk you through the decorating part more than anything.

St Patricks Cupcakes

My biggest tip for you is to use a stable buttercream frosting, also known as decorator's buttercream. This type of frosting is more stable which makes it easier for piping and won't melt if left out on the counter. Most store-bought frostings will work or you can make your own.

INGREDIENTS

  • 12 your favorite cupcakes
  • 1 package of rainbow Airheads
  • white frosting (store bought or homemade)
  • rainbow sprinkles

DIRECTIONS

  1. After you have baked your favorite cupcake recipe, allow them to cool and then fill up a pastry bag (fitted with a round tip) with white frosting. Pipe small looking clouds all over the cupcake. Pile it up high so it looks like a big fluffy cloud.
  2. Next, cut an Airhead into 3 strips and place it on top of the clouds in an arching rainbow shape.
  3. For the final touch, add sprinkles to each end of the arch.

INGREDIENTS

  • 12 your favorite cupcakes
  • 1 a package of Rolos
  • white frosting
  • gold sprinkles
  • rainbow sprinkles

DIRECTIONS

  1. After you have baked your favorite cupcake recipe, allow them to cool and then fill up a pastry bag (fitted with a round tip) with white frosting. Use a piping bag (fitted with a round tip) and pile up a nice amount of frosting on top of the cupcake in a gold cupcake wrapper.
  2. Then pour a generous amount of sprinkles into a shallow dish. After that roll the edge of the cupcake into the sprinkles making sure you go all the way around. Set the cupcake to the side.
  3. To make small pots of gold, use one Rolo candy, a small dot of frosting on top and dip the Rolo top into the gold sprinkles.
