5 Ingredient Avocado Mousse with Freshly Whipped Cream, Pistachios & Pomegranate

This recipe is one of my all-time favorite desserts, and just in time for Valentine’s Day! The consistency is super light and airy, the flavors and textures are perfectly balanced, and you really feel great after eating it – it’s not too sweet or rich. The best part? It takes about 5 ingredients and 1 step to make this yummy treat.

I love that this recipe uses avocado as a base because the healthy fat really provides the perfect texture all while giving you the nutritional benefits. I dress this recipe up for a fancy dessert to share with my husband for a holiday, or serve it to my daughter as an after-school snack with mixed nuts and fruit dippers. As I’m sure you’re gathering, this recipe is really diverse. Don’t pass this one by, it’s truly one of my go-to easy dessert recipes!

Recipe Notes

  • The avocado must be peak ripeness for this recipe to work, otherwise you won’t get the desired taste or texture.
  • My secret weapon in this recipe is a good quality local chocolate milk. The color should be nice and dark and the fat content should be whole milk. If you don’t feel like buying chocolate milk or are unable to find a local brand that fits the criteria, make the recipe using the following substitution…
  • Chocolate Milk substitution: ¬º cup whole milk or dairy-free milk of your choice, 1 extra tablespoon of dark cocoa powder
  • I’ve made this recipe again and again, and my favorite variation is when I use a dark cocoa powder like Hershey’s brand. It should be available at any regular grocery store.
  • For the whipped cream, I like to use the whole pint (the small carton) and have leftovers. This makes a ton of extra whipped cream. If you don’t want to make a full batch feel free to cut the recipe in half.
  • You could shortcut and buy whipped cream, but freshly made is easier than you think and works better in both flavor and texture.
  • The pistachios and pomegranates are perfect with this recipe, but feel free to switch it up and serve it with other fresh berries or currants, nuts or seeds!

Ingredients
  

  • 1 ripe avocado
  • 0.25 cups premade chocolate milk (whole milk
  • 2 tbsp maple syrup
  • 2 tbsp dark cocoa powder
  • 2 tsp vanilla extract
  • pinch of salt
  • 16 oz heavy whipping cream (1 pint)
  • 2 tbsp powdered sugar (confectioner’s sugar)
  • shelled pistachios, roughly chopped for garnish
  • pomegranate seeds, for garnish

Instructions
 

  • In a food processor, combine avocado, chocolate milk, maple syrup, dark cocoa powder, 1 teaspoon of vanilla extract, and a pinch of salt. Combine for 2-3 minutes, scraping down the sides as needed. Keep in mind that the longer you whip, the lighter the consistency. Place in refrigerator while you prepare the whipped cream.
  • In a large glass liquid measuring bowl, mix heavy whipping cream on a high speed for about 5 minutes until it begins to thicken.
  • Add 1 teaspoon of vanilla and powdered sugar to whipped cream and continue to mix for another minute or so until it firms up and forms peaks.
  • Layer avocado mousse and whipped cream in two small glasses and top with chopped pistachios and pomegranate seeds. Enjoy!
