Strawberry and Blackberry Granita Champagne Cocktails

I’m not going to lie, for the last 3 years I haven’t even made it to midnight I’ve been so exhausted. My exhaustion comes in the form of a 3-year-old whom I chase around all day long and if you think I’m going to make it to midnight then you’ve got another thing coming. However, parents who are like me, I may have something for you that will keep you up to ring in the new year in flavor style with my Strawberry and Blackberry Granita Champagne cocktails.

I know it’s just some bubbly to cheers when the clock strikes midnight but whoa is it good. The sparkling wine literally takes over the flavor of the granita when it starts to dissolve and the flavor is amazing. You may taste the granita and feel it’s a bit too sweet, but pair it up with some dry champagne and you’ve got the perfect balance.

While I may not be able to do it like I used to I’m slowly getting there as my daughter gets older and my pledge to you, now that my daughter is almosssst 4, that I will make it to midnight this year. Wish me luck 🙂


Strawberry and Blackberry Granita Champagne Cocktails Recipe

Ingredients
  

  • .33 cups Hot water
  • .5 cups Sugar
  • Juice of ½ lemon
  • 2 cups Strawberries
  • Champagne
  • Extra strawberries for garnish
  • .33 cups Hot water
  • .5 cups Sugar
  • Juice of ½ lime
  • 2 cups Blackberries
  • Champagne
  • Extra blackberries and mint leaves for garnish

Instructions
 

  • Strawberry Granita: In a medium bowl whisk together the hot water, sugar and lemon juice until the sugar is dissolved and set aside. Add the strawberries to a blender and blend until smooth or until it no longer blends and add in the sugar water and blend until smooth. Transfer the mixture to a small sheet pan with a 1” lip around the outside and place in the freezer for 25 minutes. Remove the tray and scrape the outside edge and bring it to the center and freeze again. Repeat the same process 2 more times. Scrape 1 last time making it like shaved ice and then freeze until completely frozen. Blackberry Granita: Same exact process as the strawberry granite except using blackberries instead of strawberries and lime juice in place of lemon juice. Once the granitas are frozen scoop some into a glass and top off with champagne and garnishes.
