You’ll Want to Make This Burger at Your Weekend Barbecue

One of my favorite things to do during the summer months is test out new burger recipes.

Whether it be beef, turkey or pork, it’s so fun to get creative when it comes to making burgers. Heck, I’ve seen some really cool burgers like lamb, lobster, duck, you name it and I’m sure someone has made a burger out of it. At the end of the day I’m still a sucker for the good old fashioned simple cheese burger, but it’s always great to try new things. So, the first chance I got I whipped up this Mediterranean Turkey Burger with Hummus and Arugula.

When making this burger, I wanted to incorporate some really strong flavors so that they complimented each other when you bite into the burger and for it to be really powerful on your palette. I mashed together some feta cheese, spinach and sun-dried tomatoes into the ground turkey so that the cheese would melt while cooking it and the tomato flavor would come bursting through when you bite into it.

To help offset some of those strong flavors like sun dried tomatoes I made a really simple hummus spread by whisking it together with some greek yogurt, lemon juice and salt and pepper for a nice compliment to the turkey burger.

In addition to the spread I thought it would be awesome to make an Israeli salad, but instead of using raw peppers I used roasted peppers to help make the flavor a bit stronger. The salad is incredibly light mixed together with all the fresh diced veggies and is so good when topped off onto the burger and all the other fixin’s that go along with it.

Mediterranean Turkey Burger Recipe with Hummus Spread and Arugula

Servings 1

INGREDIENTS

For the Salad:

  • 3 diced vine ripe tomatoes, seeds removed
  • 2/3 cup diced roasted red bell peppers
  • ½ cup of peeled and small diced red onion
  • ½ seeded and small diced cucumber
  • 2 tablespoons of chopped fresh parsley
  • Juice of ½ lemon
  • Kosher salt and fresh cracked pepper to taste

For the Hummus:

  • ½ cup of hummus
  • ½ cup of Greek yogurt
  • Juice of ½ lemon
  • Kosher salt and fresh cracked pepper to taste

For the Burger:

  • 1 pound of ground turkey meat
  • ¾ cup of crumbled feta cheese
  • ½ cup of diced sun dried tomatoes
  • ½ cup of chopped baby spinach
  • ½ cup of sliced green onions
  • 1 egg
  • 2 tablespoon of olive oil
  • 9 small burger buns
  • 2 cups of arugula leaves
  • Kosher salt and fresh cracked pepper to taste

INSTRUCTIONS

  1. Salad: Mix all of the ingredients together in a medium size bowl until combined and chill in the refrigerator.
  2. Hummus: Whisk together all of the ingredients in a medium size bowl until combined and chill in the refrigerator.
  3. Burger: In a large bowl mix together the ground turkey, cheese, tomatoes, spinach, green onions, egg, salt and pepper until combined and form 9 burger patties using the burger press.
  4. Brush the tops of each burger with olive oil.
  5. Cook the turkey burgers on a grill or in a grill pan until dark grill marks are formed and cooked throughout, about 5 to 7 minutes per side. The burger should have an internal temperature of 165°.
  6. To Plate: Place some arugula down on the bottom of a bun and add on a cooked turkey burger, some hummus spread, some salad and the top of the bun. Enjoy!
