How To Sear and Grill the Perfect Steak

In addition to cooking fish, I often get questioned with how to prepare steak.

I personally believe the best methods of cooking steak are by searing and grilling. These how-to tips are sure to help you master the craft of a perfectly cooked steak!

These two techniques for cooking steaks allow for maximum flavor due to high temperatures, fats and marinades. I wish I could say I prefer one way over the other but to me they are both delicious and one signifies summer time, outdoor grilling, while the other one can be done all year round. There are also certainly more ways to incorporate flavor into your steaks by utilizing dry herb rubs, different marinades, or by adding fresh herbs and other ingredients into the pan while cooking, but here are two simple ways to get you to where you need to go.

My number 1 advice to you would be to let it cook. Simple I know, but so many people get antsy and want to start flipping things without allowing the steak to caramelize and cook. Seared Steak Recipe

Servings 1

INGREDIENTS

  • 2 16-ounce New York Strip Steaks
  • Fresh cracked salt and pepper to taste
  • 3 tablespoons of olive oil
  • 2 tablespoons of unsalted butter

INSTRUCTIONS

  1. Season the steaks well on both sides with salt and pepper.
  2. Heat a cast iron skillet over high heat and add in the oil.
  3. When the oil begins to lightly smoke add in the steaks and immediately turn the heat down to medium-high.
  4. Add in the butter.
  5. Cook the steaks for 5 to 6 minutes on each side while constantly basting the steak with the butter and oil in the pan for a medium-rare internal temperature. Rest for 2 to 3 minutes before slicing or serving.

Grilled Steak Recipe

Servings 1

INGREDIENTS

  • 1 small diced shallot
  • 3 finely minced garlic cloves
  • 1 tablespoon of fresh thyme leaves
  • 1 tablespoon of chopped fresh oregano
  • ½ cup of Worcestershire sauce
  • ½ cup of soy sauce
  • ½ cup of extra virigin olive oil
  • Zest and juice of 1 lemon
  • 2 16-ounce New York Strip Steaks
  • Fresh cracked salt and pepper to taste

INSTRUCTIONS

  1. Preheat the grill to high heat.
  2. In a large bowl mix together the shallots, garlic, thyme leaves, oregano, Worcestershire, soy sauce and olive oil.
  3. Submerge the steaks in the mixture and marinade for 2 hours. Flip the steaks and marinade for 2 more hours.
  4. Once done marinating, remove from the liquid and season the steaks well on both sides with salt and pepper.
  5. Place the steaks on a hot grill and cook for 5 to 6 minutes on each side for a medium-rare internal temperature.
  6. Rest for 2 to 3 minutes before slicing or serving.
