1 egg
½ cup sharp cheddar cheese
1 tbsp olive oil
4 oz pancetta
½ cup diced green onions
Fresh chopped chives (for garnish)
INSTRUCTIONS
Heat oven to 400°F. Spray a mini muffin pan with nonstick baking spray.In a large bowl, mix together all ingredients (except chives). Press firmly into a mini muffin tin. Bake for 20 minutes, or until the edges begin to turn a light golden brown. Allow to cool slightly before popping from pan and serving.
