For the Paczki:
- 1 cup warm whole milk (not boiling, just warm)
- 2 ¼ teaspoons active dry yeast
- 4 tablespoons granulated sugar
- 2 egg yolks
- 1 whole egg
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 3 ½ cups flour
- 2 tablespoons butter, melted
- Fruit preserves/jellies, for filling
- Vanilla pastry cream, see recipe below (optional)
- Powdered sugar/granulated sugar, for coating
For the Vanilla Bean Pastry Cream:
- 2 cups whole milk
- 1 vanilla bean, split
- 1/2 cup granulated sugar
- 6 egg yolks
- 1/2 cup flour
- 1/4 teaspoon salt
- 1 cup heavy cream
