INGREDIENTS
Hummus Recipe:
2 strained 15-ounce cans of chickpeas
Juice of ½ lemon
½ cup of tahini
¼ cup of extra virgin olive oil + more for garnish
Pinch of cayenne pepper
6 to 8 cloves of roasted garlic
Kosher salt and pepper to taste
Chopped chives for garnish
Warm pita bread for serving
Avocado:
1 hummus recipe
1 peeled and seeded avocado
¼ cup of cilantro leaves + more for garnish
Queso fresco for garnish
Beet:
1 hummus recipe
3 roasted and peeled red beets
Goat cheese for garnish
Chopped parsley for garnish
Roasted Red Pepper:
1 hummus recipe
3 roasted red peppers
Feta cheese for garnish
Chopped parsley for garnish
INSTRUCTIONS
Hummus:
In a food processor or using a mortar and pestle, combine the chickpeas, lemon juice, tahini, olive oil, roasted garlic, cayenne and salt and pepper until smooth or slightly chunky.
Garnish with additional olive oil, cayenne and chives. Serve with warm pita.
Avocado:
Process together the hummus ingredients along with an avocado and cilantro leaves until smooth or slightly chunky.
Garnish with queso fresco and cilantro leaves.
Beet:
Process together the hummus ingredients along with the beets until smooth or slightly chunky.
Garnish with goat cheese and parsley.
Roasted Red Pepper:
Process together the hummus ingredients along with the roasted red peppers until smooth or slightly chunky.
