Vanilla + Chocolate Pizzelles
Making these Vanilla and Chocolate Pizzelles brought on so much nostalgia as I found myself constantly reminiscing on my youth over the holiday season.

- 7 eggs
- 1.75 cups sugar
- 2 sticks of melted unsalted butter
- 2 tbsp vanilla extract
- 3.5 cups all-purpose flour
- 1 tbsp baking powder
- 4 tbsp cocoa powder
- 4 tbsp sugar
In a large bowl whisk together the eggs and sugar for 3 to 4 minutes or until lightly fluffy.
Next, add in the butter while continuing to stir and then add the vanilla.
Fold in the flour and baking powder with a spatula, be careful to not over mix.
For chocolate pizzelles, fold in the cocoa powder and additional sugar.
Heat up the pizzelle maker to medium heat.
Spray the pizzelle iron with non-stick spray and place 1 tablespoon of batter in each and cook for 2 minutes.
Trim the cookies around the outside to make them circular.
Sprinkle powdered sugar onto the cookies before serving.
