Overnight Oatmeal Bar

- 2 cups steel cut oats
- 7.5 cups water
- 1.5 cups diced apple
- .5 tsp cinnamon
- .5 tsp vanilla
- .125 tsp salt
- 3-4 Toppings of Your Choice:
- Brown sugar
- Honey
- Butter
- Raisins
- Walnuts
- Pecans
- Pomegranate seeds
- Cinnamon Sticks
- Coconut flakes
- Dried Cranberries
- Blueberries
- Almonds
- Strawberries
- Chia Seeds
In a large stock pot or Dutch oven, bring water and oats to a boil, reduce heat cover and simmer for 2 minutes. Add apples and cover. Allow to cool and put pot covered, in fridge overnight.
In the morning, simmer to heat for 10 minutes. Add vanilla, and cinnamon. Transfer to a slow cooker on low to keep warm. Serve with topping “bar."
