Ingredients

  • 1 banana, mashed
  • 2 eggs
  • .25 cups almond butter
  • 1.5 tbsp coconut oil
  • .25 cups coconut flour
  • .25 tsp baking soda
  • .5 tsp baking powder
  • 1 tsp vanilla extract
  • pinch of salt
  • 1 cups fresh blueberries
  • Nonstick baking spray

Instructions

  • Heat oven to 375 degrees F. Spray a muffin tin with nonstick baking spray.
  • MIx all ingredients together. Spoon into muffin tin.
  • Bake 20-25 minutes, or just until the center of muffins spring back when touched lightly.
