Herbal Spring Bellini Bar
This Bellini Bar is the perfect thing to add to your next party. Champagne instantly makes people feel a bit more festive and excited. Amp up the traditional bellini bar with plenty of cold champagne and a few easy fresh fruit purees made from scratch.

Strawberry Mint:
- ½ pint of strawberries, trimmed
- 1 tablespoon of freshly squeezed lemon juice
- 1 teaspoon sugar
- Mint leaves
Blackberry Basil:
- 8 ounces of fresh blackberries
- 1 tablespoon of freshly squeezed lemon juice
- 1 teaspoon sugar
- Basil leaves
Peach Thyme:
- 2 ripe peaches, seeded and diced
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon sugar
- Thyme sprigs
- Place the peaches (or blackberries or strawberries), lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth.
- Press the mixture through a sieve and discard the peach (or berry) solids in the sieve.
- Place 2 tablespoons of the peach puree into each champagne glass and fill with cold champagne or prosecco.
- Garnish with fresh herbs and fruit.
