Vanilla + Chocolate Pizzelles

Makes 48 cookies

Pizzelle Maker

  • 7 eggs
  • 1 ¾ cups of sugar
  • 2 sticks of melted unsalted butter
  • 2 tablespoons of vanilla extract
  • 3 ½ cups of all-purpose flour
  • 1 tablespoon of baking powder
  • Add 4 heaping tablespoons of cocoa powder and 4 tablespoons of sugar to make the batter chocolate
  1. In a large bowl whisk together the eggs and sugar for 3 to 4 minutes or until lightly fluffy.
  2. Next, add in the butter while continuing to stir and then add the vanilla.
  3. Fold in the flour and baking powder with a spatula, be careful to not over mix.
  4. For chocolate pizzelles, fold in the cocoa powder and additional sugar.
  5. Heat up the pizzelle maker to medium heat.
  6. Spray the pizzelle iron with non-stick spray and place 1 tablespoon of batter in each and cook for 2 minutes.
  7. Trim the cookies around the outside to make them circular.
  8. Sprinkle powdered sugar onto the cookies before serving.
