Each packet serves 2 to 3

INGREDIENTS

Sausage and Veggies:

  • 3 thinly sliced red potatoes
  • 2 ears of trimmed fresh corn
  • 1 cup of green beans
  • 1 bunch of cherry tomatoes on the vine
  • ½ pound of sliced turkey kielbasa
  • 2 tablespoons of olive oil
  • 1 to 2 teaspoons of old bay seasoning
  • Chopped parsley for garnish
  • Aluminum foil

Salmon and Squash:

  • 2 each spiralized yellow squash and green zucchini            
  • 1 cup of quartered cherry tomatoes
  • 1 pound salmon fillet, skin removed
  • 2 tablespoons of olive oil
  • Juice of ½ lemon
  • 1 teaspoon each chopped fresh basil and oregano
  • Kosher salt and fresh cracked pepper to taste
  • Aluminum foil

Steak Fajitas:

  • 1 each seed and sliced red, orange and green bell pepper
  • 1 peeled and sliced yellow onion
  • 1 pound of thinly sliced sirloin steak
  • 2 tablespoons of olive oil
  • 1 ½ teaspoons of cumin
  • 1 ½ teaspoon of chili powder
  • Kosher salt and fresh cracked pepper to taste
  • Chopped cilantro and green onions for garnish
  • Aluminum foil
DIRECTIONS

Sausage and Veggies: 

  1. Place everything in the center of a large piece of heavy duty aluminum foil and toss around to coat the oil and seasonings.  
  2. Wrap up making a foil tent and bake in the oven at 500° for 18-20 minutes. 
  3. Garnish with parsley.

Salmon and Squash: 

  1. Toss the squash, zucchini and tomatoes to mix and place on the center of a large piece of heavy duty aluminum foil.  
  2. Top off with salmon and drizzle on olive oil, lemon juice and salt and pepper.  
  3. Wrap up making a foil tent and bake in the oven at 500° for 18-20 minutes.  
  4. Garnish with basil and oregano.
