Strawberry and Blackberry Granita Champagne Cocktails Recipe

  • ⅓ cup Hot water
  • ½ cup Sugar
  • Juice of ½ lemon
  • 2 cups Strawberries
  • Champagne
  • Extra strawberries for garnish
  • ⅓ cup Hot water
  • ½ cup Sugar
  • Juice of ½ lime
  • 2 cups Blackberries
  • Champagne
  • Extra blackberries and mint leaves for garnish
  1. Strawberry Granita: In a medium bowl whisk together the hot water, sugar and lemon juice until the sugar is dissolved and set aside. Add the strawberries to a blender and blend until smooth or until it no longer blends and add in the sugar water and blend until smooth. Transfer the mixture to a small sheet pan with a 1” lip around the outside and place in the freezer for 25 minutes. Remove the tray and scrape the outside edge and bring it to the center and freeze again. Repeat the same process 2 more times. Scrape 1 last time making it like shaved ice and then freeze until completely frozen. Blackberry Granita: Same exact process as the strawberry granite except using blackberries instead of strawberries and lime juice in place of lemon juice. Once the granitas are frozen scoop some into a glass and top off with champagne and garnishes.
