Matcha Mint Chip Smoothies

Makes 2 smoothies

INGREDIENTS
  • 2 cups ice
  • 1 frozen banana
  • 1 can coconut milk
  • 1/3 cup oats
  • 1/3 cup raw cashews
  • 1 bunch mint (I use about 1 clamshell package if I’m buying it)
  • 15-20 dates
  • 2-3 tablespoons maple syrup
  • 2-3 teaspoons matcha powder
  • pinch of salt
  • 1/3 cup cacao nibs
DIRECTIONS
  1. In a blender, using high speed or “smoothie” setting, combine all of the ingredients except cacao nibs. Blend about 2-3 minutes until smooth.
  2. Taste and adjust any flavors if necessary.
  3. Add cacao nibs and pulse or blend for until just barely incorporated.
  4. Serve immediately and enjoy!
