Honey Lavender Gin Sorbet



  • 1 cup hot water
  • ¾ cup (to 1 cup) honey
  • 1 cup fresh squeezed and strained lemon juice
  • 1 tbsp lemon zest (from about one large lemon)
  • ½ cup gin
  • ½ tsp salt
  • 2 tbsp lavender buds

(1) In a large bowl, combine the honey and hot water (about as hot as your faucet runs). Stir until the honey is completely dissolved.

(2) Add remaining ingredients except the lavender and stir until combined.

(3) Churn in ice cream maker according to package instructions, adding the lavender when the mixture has started to solidify but isn't fully solid. 

(4) Chill glassware in freezer before serving.
