Harvest Apple Quinoa Kale Salad

INGREDIENTS

For the Salad:

  • 1 head of Italian kale, roughly chopped 
  • ½ head of romaine lettuce, roughly chopped
  • 1 tablespoon of olive oil 
  • 1 tablespoon of fresh lemon juice 
  • ½ red apple, sliced 
  • ½ green apple, sliced 
  • ½ avocado, sliced 
  • 1 cup of cooked tri color quinoa 
  • 2 tablespoons of hemp seeds
  • 1 handful of chopped walnuts
  • 1 handful of tart dried cherries 
  • ½ cup of gorgonzola crumbles (optional) 
  • Edible flowers (healthy eating can be pretty too!)

For the Balsamic Dressing:

  • ¼ Cup of olive oil
  • ¼ Cup of apple cider vinegar
  • ¼ Cup of balsamic vinegar
  • Zest of a lemon
  • Salt + Pepper to taste 
DIRECTIONS
  1. In a large bowl toss kale with olive oil and lemon juice to tenderize. 
  2. Add in romaine and toss well. 
  3. Layer salad base with toppings. 
  4. Pop the salad into the fridge for 10-15 minutes for ultimate crisp and freshness.
  5. Dressing: Whisk all ingredients together and add salt and pepper to preference. Usually ½ teaspoon of each will do.
