½ inch ginger root
¼ peeled lime
1 oz gin
1 oz elderflower liqueur
Juice the apple, ginger, beet, and lime together. [Note: I highly recommend using organic produce for this. I like to peel the ginger, beet and apple so I don’t have to worry about any dirt/wax on the skin, but you don’t have to. Wash thoroughly if you don’t.]
Combine 3 oz of the juice with the gin and elderflower liqueur in a cocktail shaker with ice.
Shake and pour over 1 large ice cube. Garnish with herbs and edible flowers.
