  • ½ bunch kale (about 7 stems)
  • 1 ½ tbsp olive oil
  • 1 tbsp nutritional yeast
  • 1 pinch kosher salt
  1. Preheat oven to 275 degrees. Remove kale from center stems and tear into small pieces (roughly the size of potato chips). Rinse the leaves and dry well with a paper towel.
  2. Place kale in a medium bowl and drizzle with olive oil, using your hands to work the oil into the leaves.
  3. Sprinkle on nutritional yeast and salt and use your hands to work the seasonings into the leaves.
  4. Spread the kale onto a baking sheet lined with parchment. Bake for 10 minutes, give the leaves a stir, and bake about 10 minutes more or until chips are crisp.
  5. Serve immediately or wait until the chips are cool before placing them into a bowl.
