Blueberry Breakfast Bites

INGREDIENTS
  • 1 banana, mashed
  • 2 eggs
  • ¼ cup almond butter
  • 1 ½ tbsp coconut oil
  • ¼ cup coconut flour
  • ¼ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • pinch of salt
  • 1 cup fresh blueberries
  • Nonstick baking spray
DIRECTIONS
  1. Heat oven to 375 degrees F. Spray a muffin tin with nonstick baking spray.
  2. MIx all ingredients together. Spoon into muffin tin.
  3. Bake 20-25 minutes, or just until the center of muffins spring back when touched lightly.
