Shaved Raw Vegetable Salad Recipe

I cook all day every day and most often it’s something hearty, sometimes loaded with flavor (fat), and really encompasses comfort food in all facets. I am so thankful for the days when I am making a recipe that is loaded with vegetables, like this Shaved Raw Vegetable Salad.

The cool part about this Shaved Raw Vegetable Salad is its versatility. The recipe is not at all limited to the ingredients I put in there and can be expanded by using so many more different kinds of vegetables or substituting in vegetables. I realize not everyone is going to like raw beets or even gorgonzola, so my recommendation to you is to always find out what’s in season and what’s on sale. For instance, this recipe could completely change during those winter months to include parsnips, turnips or even a fennel bulb.

The whole point of this salad recipe is to get creative and to add a healthy delicious salad loaded with nutrients and fresh vegetables to your diet. I literally made this entire salad in under 20 minutes, so easy! Oh and don’t forget the amazing salad dressing pourer by Zyliss, probably my favorite new thing. Enjoy!

Shaved Raw Vegetable Salad

Servings 1

INGREDIENTS

  • 6 shaved tri-colored carrots
  • 1 thinly sliced cucumber
  • 5 thinly sliced stalks of celery
  • 3 thinly sliced golden beets
  • 3 thinly sliced red beets
  • 10 shaved Brussel sprouts
  • 5 sliced radishes
  • ½ cup of sliced chives
  • 1 cup of sliced cherry tomatoes
  • ½ cup of chopped macadamia nuts
  • ½ cup of crumbled gorgonzola cheese
  • Red wine vinegar and evoo for dressing
  • Kosher salt and fresh cracked pepper to taste
  • Micro greens and sliced avocado for garnish

INSTRUCTIONS

  1. Combine all ingredients except for the red wine vinegar and evoo. into a large bowl and mix together.
  2. Dress with red wine vinegar, salt and pepper and garnish with mice greens and sliced avocado.
